Start with a brown rice tortilla, (i use a large saucepan, but if you have a toaster oven that’d probably be best) in a pan on medium heat. Add some olive oil and brush it around the tortilla, chop up some cherry tomatoes, throw some basil leaves on and then lots of mozzarella! and if you have other cheese put it on too! Pile on the cheese! Cook it till the cheese is melted. Devour. Repeat. Its so simple and delicious! If you need some protein you can add bacon or pepperoni.
